Abstract
Pediococcus pentosaceus is a member of a group of lactic acid bacteria, Gram positive, and facultative anaerobic. This species was able to produce antimicrobial substances such as lactic acid, hydrogen peroxide, and bacteriocins. This study aimed to test the antimicrobial activity of the thermophilic bacteriocin crude extract produced by P. pentosaceus. Bacteriocin crude extract was obtained from 14 hours of P. pentosaceus culture supernatant, was heated at 100 0C for 20 minutes. Thermophilic bacteriocin crude extract was tested for its ability to inhibit the growth of Salmonella enteritidis and Enterococcus casseliflavus using the agar well diffusion method. The results showed that the bacteriocin crude extract can inhibit the growth of S. enteritidis and E. casseliflavus about 16.5 and 20.8 mm, respectively. It was concluded that that the thermophilic bacteriocin crude extract from P. pentosaceus was able to inhibit the growth of S. enteritidis and E. casseliflavus.
